It's just a term that's been used quite a while to describe wooden stocks, grips and handguard. Now of course it applies to plastic as well.

Handguards and rails, are some of the most popular things to switch out, which may be why you heard them called furniture most often. Stocks and grips fall into the furniture category as well.

The Brits used the term starting in the late 19th century for the wood butt stocks, fore-ends, and hand guards on SMLE's. It probably goes back even further as many really old fire arms have furniture grade wood on them, ornately carved and checkered.
